About Us
Ardente Kitchen is a Roman-inspired restaurant in Charlotte's Dilworth neighborhood, built on handmade pasta, wood-fired cooking and the Italian tradition of gathering around the table. From the team behind Mano Bella, Ardente brings the warmth of a Roman trattoria to the heart of Charlotte— bold flavors, fewer ingredients, and a confidence in doing things the right way.
The Italian spelling of the English word “ardent”. An adjective that translates to burning, fiery, or passionate. It stems from the Latin ardere, which means “to burn". Roman slang for “al dente”.

Ardente comes from Rome, a way of cooking that keeps things simple and expects them to be done right. It’s not just the food, it’s the philosophy behind it. A confidence in simplicity, nothing to hide behind. A connection to the land and the season. Techniques passed down over time, not picked up from trends.
Built on the foundation of Mano Bella, Ardente carries forward the same approach. Same people. Same discipline. Years of making pasta by hand, learning through family, and building trust through simple food done right.
Inspired by Rome and Central Italy, the menu is built on fewer ingredients and stronger execution. We make everything from scratch, and we know our flour and our farmers because when you start with good ingredients, you don’t need much else. Pasta made by hand, pizza and meats cooked over fire, vegetables prepared simply and served when ready.
Ardente is a little louder, a little more alive, but still built on the same idea: if it’s not good enough on its own, it doesn’t go on the plate. More fire. More energy. A different kind of Italian neighborhood restaurant.

Ingredient Philosophy: If it's not good enough on its own, it doesn't go on the plate. We cook with fewer ingredients so each one has to earn its place— house-made pasta, wood-fired pizza, and vegetables sourced from farmers we trust.

Raffaele Patrizi
Co-Owner and Creative Director
Chef Raffaele Patrizi is the co-owner and Executive Chef of Ardente and Mano Bella. Born and raised in Rome, Italy, he brings more than 15 years of culinary experience to the kitchen, with a career spanning Italian restaurants in Rome, Los Angeles, and Charlotte and a focus on blending authentic Italian tradition with a deep appreciation for North Carolina's local food community.
As the culinary leader behind the Patrizi family's restaurants, Raffaele works closely with local farmers, artisans, and importers to source exceptional ingredients while celebrating the people behind them. From participating in local food panels, hosting farm dinners, and building genuine and meaningful relationships with farmers, his passion for community and regional Italian cooking is reflected in every menu.
Madison Patrizi
Co-Owner and Executive Chef
Madison Patrizi is the co-owner of Ardente and Mano Bella, where she oversees operations, branding, marketing, and design. A graduate of the University of Notre Dame School of Architecture, she combines a background in architecture and project management with a passion for hospitality and thoughtful guest experiences.
Before opening Ardente and Mano Bella, Madison co-founded Mano Bella Artisan Foods, growing it from a local pasta business into a regional brand carried in specialty retailers throughout the Carolinas. Today, she focuses on building restaurants and experiences that celebrate authentic Italian culture through intentional design, genuine hospitality, and a strong sense of community.
